Recipe: Baked Oatmeal

I really love cooking and baking, and sometimes I spend hours watching cooking videos on YouTube. It's just so calming to me! Maybe that's weird, but it's actually really rewarding because I stumble over so many cool recipes I would have never thought to try out otherwise. One of my favourite YouTube channels when it comes to all things food is definitely The Domestic Geek - Sara Lynn's video are amazing and she deserves all the subscribers, go check her out! The following recipe is also inspired by her videos, so I'm definitely not taking credit for this cool recipe idea!

The idea of baked oatmeal is basically that it's a cool snack idea that looks similar to a muffin, but actually contains way less sugar and no flour at all. Yay for healthier ingredients! If you want to make those, you'll need:

420g (3 cups) of rolled oats
85g (1/2 cup) of brown sugar 
2 tsp of baking powder
2 eggs
225ml (1 cup) of applesauce OR mashed banana
225ml (1 cup) of milk
1 tsp of vanilla extract 

1) In a large bowl, mix together all your dry ingredients (rolled oats, brown sugar, baking powder); take a second bowl and whisk together your wet ingredients (eggs, applesauce/mashed banana, milk, vanilla)

2) Pour the wet ingredients into the dry ingredients and mix them together; after that is done, scoop the mixture into muffin tins. I topped mine with a few dark chocolate chips and crushed hazelnuts, but you can use whatever you have on hand/like! 

3) Bake at 190 °C (375 °F - sorry Americans, but that's just such a weird measurement) for around 30 minutes and enjoy! 

These are really quick to throw together; when I tried them out a few days ago I actually only made half of the batter because I wasn't sure how they'd turn out - it worked out really well and they are really tasty! They can be kept for 3-4 days in the fridge as well, but I have to say that they really taste best when they're warm.

  1. Yum these look great and love the idea of popping some chocolate chips on the top for a little bit of extra sweetness :). I have never tried baked oatmeal but have heard of it a few times. It is interesting that it doesn't contain any flour! This is definitely something I think I would enjoy as I have made blueberry and bannana muffins a couple of times and loved them. I like to have more savoury snacks mid-morning, so I will be picking up some rolled oats next time I am at the shops :).

I loved the look of these ever since I saw them in Sara Lynn's video, I just had to try them! :D They chocolate chips are amazing on them, wouldn't want to miss out on a bit of chocolate even though it's a relatively healthy treat. I really like that it doesn't contain flour as well! Oats are my new favourite thing, they're actually really versatile and so cheap, it's great! :)
      Also, blueberry and banana muffins sound veeeery tasty! :D
